There is something in raw potatoes (or at least raw white ones) that isn't good for them - or so I have heard, and I don't take chances. My birds, a red lored amazon, a Meyer's parrot, and a Senegal parrot, get a little of everything I eat (in addition to a good organic pelleted diet), except onions, mushrooms, avocado, chocolate, and of course no caffeine or alcohol. They also shouldn't have much sugar or salt, and we have to keep portions in mind because they are so much smaller than us. They can't digest dairy, but mine occasionally get a tiny shred of cheese, which they love. Goldie, the Amazon, drank some almond milk out of my glass last night (bad habit of hers), and enjoyed it very much! My birds particularly enjoy cooked sweet potato, raw or cooked broccoli (neither of which I care for!) and carrots, raw or cooked. Of course, they prefer fruit, but I feed more veggies than fruit. They like cooked beans, too. I don't feed a whole lot of nuts, because amazons are prone to obesity.
