The reason I forgot it was because I FORGOT TO SERVE IT LAST NIGHT! However, it really does belong in the recipe, so I'm reposting it correctly. It's not exactly what we ate last night, but it's what SHOULD have been there! Mushroom & Tofu Tacos Ingredients 1 large box (24 oz.) white mushrooms, sliced 1 box light (low-fat) firm tofu, cut into small cubes 2 packages taco mix water cooking spray dry white wine Hard taco shells or tortilla wraps (we used both) 2 avocados, sliced (or guacamole, if you prefer) 1 can black olives, sliced (optional) 1 container reduced fat sour cream 1 jar corn, bean, & tomato salsa (or your favorite salsa) several sheets of romaine lettuce, shredded CHEDDAR & MOZZARELLA CHEESE, SHREDDED (VEGAN CHEESE IS FINE, TOO) Lightly saute the mushrooms and tofu with the cooking spray and wine. Then, just pretend that the mixture is meat and follow the directions on the back of the taco mix package. Sprinkle on the mix, add some water, and stir until it thickens up. The rest is simple (as if the beginning was difficult LOL). Just stuff the hard or soft tacos with the mushroom & tofu mixture, avocado slices, olive slices, salsa, lettuce, sour cream, AND CHEESE! Side dishes: Crudities: 1 small bag Baby carrots 10 oz box of fresh mushrooms, Quartered, with the stems left on for " handles " 1 box grape tomatoes 2 cucumbers, peeled and cut into rods maybe 4 inches long 2 dipping sauces (fat & sugar free honey Dijon dressing, fat free ranch dressing, but you could used any dipping sauces that you prefer) Beans & Mushrooms: 1 can fat free refried beans 1 can black beans, drained 1 can kernel corn, drained 10 oz. box of mushrooms, sliced Mix it all together. Heat and serve. Dessert: Fresh Fruit Salad: 2 mangos, cut up 1 bag of seedless green grapes, grapes pulled off the vines 4 kiwis, peeled and sliced 1 box of strawberries, each large berry halved 1 box of blueberries 1 pineapple, cut into chunks Mix it all together and serve. We ate the leftover fruit salad for breakfast with cottage cheese. Yum!
