For lunch today, I made this casserole. It was very tasty. I will make

a nice tomato gravy to serve with the rest of it.

 

Baked Barley Grits and Cheese

Ingredients

1 3/4 Cups Vegetable

1/4 tsp. Sea Salt

3/4 Cup Barley Grits/Meal

1/2 Cup Grated Cheddar Cheese

3 Eggs well beaten

1/4 tsp. Ground Black Pepper

1/8 tsp. Worcestershire Sauce

1/2 Cup Grated Carrot

1/2 Cup Minced Celery

1/4 Cup Minced Onion

Tomato Gravy

2 tablespoons butter

2 tablespoons flour

1 (15-ounce) can diced tomatoes, undrained

1/2 cup evaporated milk

salt and pepper to taste

Brown flour in butter. Gradually stir in the milk, tomatoes

salt and pepper. Simmer a few minutes until thickened.
