Guest guest Posted April 14, 2010 Report Share Posted April 14, 2010 This is a very simple recipe, but very tasty. Peel and roughly chop 2 parsnips and 1 onion (you could use vidalias, if you like). Saute in olive oil until onions are soft, but not browned. Add 1 cup of water. Bring to high pressure and cook for 5 minutes. Quick release. Cool slightly and puree with immersion blender or in blender. Season w/salt & white pepper to taste. I fell in love with parsnips when I was in New Zealand in 1996 - they cook them a lot! Maybe I will add a leek or shallot too.
