Hi Nancy,

You are right - you can't foolproof things against idiots lol. Not that I think

my mother was an idiot, she was a fantastic cook .

I wonder how many people had pressure cookers in 1897 - that is just amazing.

 

But the new ones, IMHO, are much better than the " jiggle tops " . I have only

looked at the Kuhn Rikon and the Fissler, and they are not cheap, but they are

almost " idiot proof " lol. But of course you still have to follow directions,

maintain your pressure cooker etc.

Also I found this while doing some googling on pressure cookers

 

Use in food detoxification

Some food toxins can be reduced by pressure cooking. A Korean study of

aflatoxins in rice (associated with Aspergillus fungus) showed that pressure

cooking was capable of reducing aflatoxin concentrations to between 12 and 22 %

of the amount in the uncooked rice.

The old pressure cookers are great too. IF the directions are followed you

won't have any problems. No one I know in my family has ever had one explode

including my Grandma Davis who was married in 1897 and had a REALLY old pressure

cooker. You just have to pay attention operate them per instructions and you

won't have pea soup on the ceiling.
