Guest guest Posted April 17, 2010 Report Share Posted April 17, 2010 My older son broke the cast on his ankle yesterday, so I was surprised when I arrived home from work and found my husband's car in the driveway. He'd had to stay home to get my son a new cast, a soft cast this time. While that was a lovely surprise, both that my husband would be home for dinner and that my son only needed a soft cast to protect his newly healed ankle, there was just one problem. I had a vegetarian casserole planned for dinner and my husband doesn't do vegetarian. I told him that he was welcome to the leftover steak in the fridge, but this was what I was making. He could eat it or not as he chose. He ate it and the steak is still in the fridge. Eggplant, Mushroom, and Tofu Casserole Ingredients 2 large eggplants, peeled and sliced 2 boxes fresh white mushrooms, sliced (use your favorite mushrooms) 2 boxes low-fat firm tofu, diced 1 bag low fat shredded mozzarella cheese 1 bag low fat shredded cheddar cheese 1 box instant mashed potatoes (homemade would be better, but I didn't have the time) cooking spray 1/2 - 1 cup dry white wine 1 package sazon seasoning (you can use your favorite seasoning instead) Saute eggplant in cooking spray and wine until tender. Do the same for your mushrooms. Then, do the same for your tofu, but add the sazon seasoning. Prepare the mashed potatoes according to the instructions (I used butter/herb flavor). Spray your casserole pan (I used 2 large pyrex casserole pans) with cooking spray. Put out a layer of eggplant. Sprinkle mozzarella cheese on it. Put down a layer of tofu. Sprinkle cheddar on it. Put down a layer of mushrooms. As I suggested, it may require more than one pan. Put down a layer of mashed potatoes. Heat in the oven at 350 until the top of the potatoes begins to brown. That's all you have to do. Just serve it warm. My kids and husband actually enjoyed this. I hope you do, too.
