Guest guest Posted April 20, 2010 Report Share Posted April 20, 2010 Mediterranean Bean Salad 10 ounces mixed baby greens 15 1/2 ounces canned cannellini beans, rinsed, drained 10 medium cherry tomatoes, halved 1/2 cup diced red onion 1/2 teaspoon olive oil 1 tablespoon Dijon mustard 2 tablespoons balsamic vinegar 2 tablespoons fresh tarragon, minced 2 medium garlic cloves, minced 1/4 teaspoon salt 1/8 teaspoon ground black pepper In a large bowl, combine greens, beans, tomatoes and onion. In a separate bowl, whisk together remaining ingredients for dressing. Pour over salad and toss well before serving. Makes 4 servings.
