Guest guest Posted April 24, 2010 Report Share Posted April 24, 2010 Scarlet Vegetable Soup with Apple 6 carrots 3 medium sized potatoes 3 beets 5 cups vegetable broth, homemade or canned and or water, I like homemade 2 to 5 cloves garlic, depending on how much you like garlic, I like 5 sea salt to taste fresh or dried herbs/spices as desired 1 apple Add vegetable broth/water to soup pot and bring to a boil. While liquid is heating up, peel and chop the carrots, potatoes, and beets, and then add them to the soup pot. Finely chop the garlic and add to the soup pot. Marvel at the beautiful scarlet color. When the soup comes to a boil, lower the heat to medium-low and simmer. The soup is done when the vegetables are cooked through (soft but not mushy) and they have all given their flavors to the broth. Actually, it's done when you say it's done. Taste the soup, paying particular attention to the broth, and add sea salt and/or herbs and spices as desired. Ladle the soup into bowls. Coarsely chop the apple.
