Guest guest Posted April 25, 2010 Report Share Posted April 25, 2010 Spicy Zucchini Pecan Bread 3 cups unbleached white flour 1 tsp. baking powder 1 tsp. baking soda 2 1/2 tsp. pumpkin pie spice 1 cup chopped pecans 3/4 cup oil 3 eggs 2 cups sugar 2 tsps. vanilla 3 cups shredded zucchini Preheat oven to 350 degrees and grease and flour 2 loaf pans. Mix flour, baking powder, soda, spices and pecans in large bowl. In separate bowl, combine oil, eggs, sugar and vanilla. Stir in shredded zucchini. Make a well in dry ingredients and pour in egg mixture. Stir until just moistened. Spoon into loaf pans and bake for one hour. Cool in pan for 10 minutes to loosen.
