Spicy Zucchini Pecan Bread

 

3 cups unbleached white flour

1 tsp. baking powder

1 tsp. baking soda

2 1/2 tsp. pumpkin pie spice

1 cup chopped pecans

3/4 cup oil

3 eggs

2 cups sugar

2 tsps. vanilla

3 cups shredded zucchini

Preheat oven to 350 degrees and grease and flour 2 loaf pans.

 

Mix flour, baking powder, soda, spices and pecans in large bowl.

 

In separate bowl, combine oil, eggs, sugar and vanilla. Stir in shredded

zucchini.

 

Make a well in dry ingredients and pour in egg mixture. Stir until just

moistened.

 

Spoon into loaf pans and bake for one hour. Cool in pan for 10 minutes to

loosen.

You have 2 loaves, one to eat and one to give to a friend.
