Here is a favourite salad I often serve. *GREEN BEAN SALAD* *2 pounds green beans* *b cup olive oil ( I use 1/3 cup)* *a cup cider vinegar* *1 tsp salt, ½ tsp pepper* *1½ tsp **Dijon** mustard* *2 medium onions sliced thinly (Can use green onions chopped)* *¼ cup minced parsley (optional)* *2 tsp dried tarragon or more* *METHOD * *Cook beans in boiling water 10-15 minutes until tender but crisp. Drain well. Mix ingredients for dressing. Add dressing while beans are still hot. Let stand at room temperature until serving time.
