You could make up a batch or two over the weekend and put it into individual freezer containers that could also go in the microwave. Boil some pasta to keep in the fridge and add different veggies and dressings for pasta salads. I have a vegan chili recipe that I love that incorporates bulghur. Quinoa pilafs can also be made ahead - my (nonvegan) daughters love that for lunch, too. I have also found some Kashi frozen dinners that are vegan (there's a mayan one that is very tasty) and Amy's has frozen vegan burritos that I love as well. I will keep things like this in the freezer for when I don't have time/inclination to make anything for lunch or when I make a meat based meal for my family and am not able to make a vegan alternative for me.
