Guest guest Posted April 29, 2010 Report Share Posted April 29, 2010 Lacinato Kale and Pineapple Salad Delight1 Bunch of Fresh Certified Organic Lacinato Kale1 Whole Fresh PineappleA Pinch of Himalayan Salt Pink Crystal Salt melted in a tablespoon of spring water2 Tablespoons of Fresh Squeezed Lemon Juice4 Tablespoons of Cold Pressed Extra-Virgin Olive Oil PreparationCleanse the kale thoroughly in cold water and let dryCut the kale into fine then strips Cut the Pineapple into four halves and slice off the center core on each, then cut out chucks. Place them in a bowl and cover with 1 tablespoon of fresh lemon juice Heat a sauce pan with the tablespoon of water on very low heat to dissolve the Himalayan Crystal Salt Pour the remainder of lemon juice along with the olive oil in a small bowl with the melted salt. Place the kale in a large bowl and mixed together the olive oil, lemon juice and melted salt. Saturate well making sure all the kale is covered. Gather your favorite glass bowl or platter and neatly lay the kale mixture and dress with the pineapple chucks. Enjoy the Delight! My Inspiration for this recipe came while visiting New Flower Market off Henderson Ave. It was my first time seeing such a dark green kale. Researching the amazing health benefits I thoroughly washed the kale in cold water, and grabbed my pineapple and made me a snack while working on my book. Later, I gave it an extra kick by adding the lemon juice, olive oil and crystal salt. Knowing the health benefits of pineapple so combining the two became my special treat. Likewise, for breakfast I sauté fresh certified organic Lacinato Kale. Some mornings I switch and use turnip greens, and or fresh baby spinach in olive oil with a serving of fruit on the side. It taste so good to me! Therefore, every salad I make, I add fresh certified organic Lacinato Kale. Central Market on Lovers Lane introduced me to certified organic herbs. The display of herbs made me happy. I now cook with fresh sage, rosemary, and mint. The flavor is sensational and of course the health benefits I welcome.
