Guest guest
Yellow Submarine Soup 2 onions, coarsely chopped 4 garlic cloves, crushed 2 cups yellow split peas 1/2 tsp. thyme (dried) 1 tsp. oregano (dried) 1 tsp. salt (use salt to taste when soup is done) 1/4 tsp. cumin 1 tsp. pepper 1/4 to 1/2 tsp. crushed red pepper flakes 6 1/2 cups vegetable broth steamed mini yellow squash (optional) they make good submarines If making on the stove then saute the onion and garlic for a few minutes in a tablepoon ofolive oil until tender firm. Add other ingredients and bring to a boil, reduce heat to a low simmer and cover pan. Cook for 50 minutes, soup will be a nice rich thick soup. Salt to taste. If using the crockpot I place everything in the crockpot and let cook for hours on high and turn temp. to low for the last 1 or 2 hrs. Serve with a mini yellow squash on top, a great submarine.
