Potato salad can be vegetarian,right? But vegetarian potato salad has a hesitant factor. It's a funny, yet frustrating subject for me. What kind of potato salad do you make that has non-vegetarian items? Bacon bits?Fake bacon is available everywhere. Some vegetarians eat eggs. Because there are available range free eggs naturally laid by happy chickens that are free to run around and peck...seems natural to many vegetarians.Those eggs are expensive to many people in USA. Many would rather buy the cheap ones. [Mods: I won't get into politics.]Many incredible recipes for potato salads are vegan. I love German potato salad w/ steamed red potatoes, steamed red onions, steamed green beans, tossed w/excellent olive oil, balsamic vinegar/chopped parsley & ground salt & pepper. I've just played off recipes from that Uncheese Cookbook. Added more of this and less of that. I was aching for my DS to have dairy free macn'cheese. He loves it! Potato Salad (vegetarian) that I've had is basically potatoes, celery, carrots, onions, peas, maybe mustard,s/p, and mayo. (my mom adds macaroni) The Vegan Potato salad I've had is just red potatoes, red onions, pickles, s/p, O & V. I have a friend who is anti-vegetarian. I just don't emphasize anything to her anymore.
