countering the anti-vegetarians + veggie stock recipe

That's okay. I'm not a vegetarian, either, although you'd be surprised by

how many people insist that I am, but " don't want to admit it. " Although

why I wouldn't want to admit it eludes me. It's not as if being a

vegetarian is a crime! It's just that most people are either vegetarian or

consider meat the main part of all or most meals. But why would anyone be

anti-vegetarian. It's a personal choice, not a campaign!

 

Anyway, I'm the opposite. I usually eat vegetarian, although occasionally

indulge in meat, but when I do: a) it's usually fish (which makes me

really a pescatarian who occasionally slips) or b) the meat is a side dish to a

vegetarian meal. I can't imagine eating meat or even fish as a main

course. It's not an ideology. It's just how I eat.

That's why I've joined several vegetarian groups. I need the vegetarian

main courses. I may, if I'm in the mood, pick at a little of my husband's

meat course, but I just can't eat much of it. Don't know why... just can't.

The older I get, the closer to vegetarian I get. I'm not trying; it's

just happening organically.

 

Moreover, I want my children to eat healthy, especially my obese older son,

so I push him gently towards pescatarianism. I can't take away all his

meat. He'll freak on me, but he loves fish, so that's where I go with him.

My skinny younger boy is happy with a vegetarian meal or not. He just

doesn't care. As long as it's not overcooked or over-spiced, my younger boy is

happy. He's a kind of raw food person. The less you do to what he eats,

the better he likes it... and if what he's served is vegetarian, that's

just hunky dory with him.... as long as it's not spicy.

 

I LOVE soup. Here's a really cool recipe I found. It's not easy to get a

store bought veggie broth or stock, so here is a cool recipe for one that

I found...

 

Vegetable Stock

 

Vegetable stock can be used to replace the meat stock or water in

just

about any recipe. It adds a hint of flavor and extra nutrition to soups,

risotto, and more. This very basic recipe is really just a guideline -

there is no right or wrong recipe for vegetable stock. You can add just

about anything - a lone mushroom or tomato sitting in your fridge, the

potato skins you didn't want in your mashed potatoes - and if you don't

have one of the ingredients listed here, just substitute something else.

Yield 6 cups

Time 45 minutes

Tools kettle or Dutch oven

Ingredients

1 large onion

2 large carrots

2 stalks celery and a few of their leaves

1 bunch scallions (both white and green parts) or 1 large leek

1 t olive oil

8 cloves crushed garlic

8 parsley sprigs

6 thyme sprigs

2 bay leaves

2 t salt

2 Q water

 

Directions

Scrub and roughly chop onion, carrots, celery, and

scallions.

Heat the oil in the pot over high heat, add the vegetables, garlic,

and herbs and cook for 5-10 minutes, stirring frequently.

Add salt and water, bring to a boil. Lower heat and simmer uncovered

for 30 minutes.

Strain and use, or let cool and store in refrigerator or freezer.

Notes: Stock freezes well, so make a big batch and then pull it out

the next time you make soup.

Janis,

People often fear what they don't understand so it's much easier to become

defensive and pick at us. They also associate us with extremist groups like

PETA, they think we are going to preach or judge them.

I have so many accepting non-veg friends, I think it's because I usually don't

even mention it, they know im a great cook and baker and they eat food I

prepare, so when they find out they are shocked. They will say things like, is

this something recent, is that right you don't push it on me, wow for how long

I wouldn't have guessed.

Just hang in there and do the best you can, make small changes at a time.
