Guest guest
Dear Donna, My dh is really okay. He was just very tired and stressed. I often don't get along with his mom very well, so he took my vegetarian sausages as a rebuke. He's usually more amused than contemptuous when I prepare a vegetarian meal. He's even done it a time or two. He was just having an off day. We all do sometimes. Besides, it's hard to remain angry at someone who's currently elbow deep in oily goop fixing your brakes! LOL Bean burgers? I love bean burgers, especially black bean burgers. I will definitely go look at your recipes. Falafel mix used to make falafel burgers? Do you have to fry them? I love falafel, but authentic falafel are fried, which is why I generally avoid making them. I've never even seen a mix; I always make them from scratch. A mix would be easier. Know where I might find one? Trader Joe, perhaps? Here's a veggie burger I found that looked really good... Vegetarian Vegetable Burger Ingredients: * 3 tbsp olive oil * 1/2 cup corn kernels * 7 mushrooms, diced * 3 scallions (green onions) diced * 1/2 red bell pepper, diced * 2 cloves garlic, minced * 1 tsp cumin * 1 carrot, grated * 1 small potato, grated * 1/4 cup _silken (soft) tofu_ (http://vegetarian.about.com/od/vegetarianvegan101/f/TypesofTofu.htm) * salt and pepper to taste * 1/2 cup bread crumbs Preparation: In a blender or food processor, process tofu until creamy and set aside. Sauté the corn, mushrooms, scallions and bell pepper in one tablespoon of oil for 3 to 5 minutes. Add the garlic and cumin and cook for one more minute. Remove from heat and add the carrot, potato, tofu, salt and pepper. Add bread crumbs until the mixture holds together. You may need a little bit more or less than a half a cup. Shape the mixture into patties and refrigerate for at least one hour. Heat remaining two tablespoons of olive oil and cook each patty until the veggie burgers are done, about 3 minutes on each side.
