Guest guest Posted May 6, 2010 Report Share Posted May 6, 2010 Broccoli Garlic Puree 1 bunch broccoli 1 cup water 1 medium potato peeled and cut into 1 " pieces 2 garlic cloves peeled 1 teaspoon salt 1 teaspoon unsalted butter 1 teaspoon virgin olive oil Separate broccoli into stalks. Using a vegetable peeler remove fibrous outer layer from stems. Cut stalks including florets into 2 " lengths. Place broccoli in a large saucepan with water, potatoes, garlic and salt. Bring to a boil and cover then reduce heat to low and boil gently 15 minutes. Place contents of saucepan in bowl of a food processor then add butter and oil. Process mixture until it is very smooth then transfer to serving bowl and serve immediately. Serves 4. -- Never be afraid to try something new. Remember amateurs built the ark.
