Guest guest Posted May 10, 2010 Report Share Posted May 10, 2010 Hello, My wife and I have been vegetarians for 2 years now and our 3yr old daughter is a vegetarian also! We enjoy creating our meals. We have quite a few simple meals that I prepare on a regular basis, but we are willing to try new options. We have made the choice to eliminate the consumption of meat and most animal products mostly because we love animals; we use little dairy products. We help many small animal rescues and run a home-based business making small animal products. Our daughter is picky (as any 3yr old's are) so I have to be creative to create meals for her. Thank you for taking the time to let me introduce ourselves. My recipe for Mushroom/Seitan " stroganoff " (measurements are " rough " ) 2pkgs baby bella mushrooms marinated seitan (cut into strips)(about 2 cups worth) 1 large red onion 4 cups water 2tbsp olive oil 1 cup milk (using rice milk works well) rice flour (3-4 tablespoons) mushroom bullion (better than bullion brand paste is best)(3 heaping tbsps) 2 cups cabbage 1pkg wide egg noodles Start with making the mushroom stock. Boil 4 cups of water with the bullion paste for roughly 2-3 mins., then simmer for 10 mins.. Set aside Saute (halved) mushroom till brown. Add 2tbsps of flour. Just barely brown flour. Add 2 cups of mushroom stock, 1 cup of milk, and bring to boil while stirring. Add remaining flour with brisk whisk till desired thickness (think gravy!) remove from heat, cover. Saute seitan strips and onion with favorite seasonings and brown till slightly crispy. Combine " gravy " and sietan/onions in large pan. stir in 1-2 cups of stock using high heat till bubbling, set heat to low, add the cabbage (adding cabbage last keeps it crisp), stir to reach desired thickness. Boil noodles, drain. Plate noodles and spoon " stroganoff " mixture onto them. Add fresh ground pepper to taste, Enjoy! I would say this recipe serves 4-5 Thanks for checking it out, hope you enjoy!!
