For vegetarian lasagna, you can use polenta instead of the noodles. Once

cooked, spread on a sheet pan. Let cool, then cut. Use your preferrec choice

of filling. Offers a great new flavor and texture.

Another option for noodle replacement is to cut strips of zucchini and/or

eggplant to noodle thickness, blanch and use them where ever the recipe calls

for noodles.
