Guest guest Posted May 12, 2010 Report Share Posted May 12, 2010 Potato Apple Hash 2 tablespoons olive oil 1 small onion, cut in small dice 2 large yellow potatoes, peeled and cut into small dice 2 tart eating apples, such as Fuji or McIntosh, peeled, cored and cut into small dice 1 tablespoon fresh thyme leaves 1 tablespoon butter salt and black pepper, as needed In nonstick 12-inch skillet, heat oil and sauté onions over medium high heat for 5 minutes, or until translucent. Add potatoes; sauté for 10 minutes, or until half cooked. Add apples, thyme and butter; season with salt and pepper. Cook 10 minutes, or until potatoes are lightly browned and cooked through.
