Guest guest Posted May 13, 2010 Report Share Posted May 13, 2010 Fruit, Nut, and Rice Casserole 2 cups chopped dried apricots or peaches 1 cup golden raisins 1 cup long-grain rice 4 tbsps. olive oil 1 medium onion, chopped 1 green bell pepper, cored, seeded, and chopped 1 tsp. curry powder 1 cup sliced almonds salt and freshly ground pepper to taste Soak the apricots and raisins in warm water for 30 minutes. Drain and set aside. Meanwhile, cook the rice in 4 cups boiling salted water, stirring occasionally, until the rice is tender, about 20 minutes. Drains and set aside. Heat the oil in a skillet over moderate heat and saute the onion and bell pepper until tender but not brown, about 5 minutes. Stir in the curry powder and almonds and saute 2 to 3 minutes. Stir in the drained fruits and rice and transfer to a greased baking dish. Bake covered in a preheated 375 degree oven for 30 minutes. Serves 4 to 6. -- Never be afraid to try something new.
