Guest guest Posted May 18, 2010 Report Share Posted May 18, 2010 Penne with Tomatoes and Snow Peas 12 plum tomatoes, skinned, coarsely chopped 4 garlic cloves, minced 1/2 cup scallions, thinly sliced 1 cup green bell pepper, chopped 2 tbsps. olive oil 2 cups mushrooms, sliced 1 cup snow peas 1 lb. penne 1/4 tsp. cayenne 1 tbsps. tamari In a large pot, saute the garlic, scallions and green bell pepper in oil over medium heat until the peppers are tender crisp, about 2 minutes. Add the mushrooms, reduce the heat to low and saute for 3 minutes. Add the tomatoes and snow peas. Cover and simmer for 10 minutes. Cook the pasta until *al dente*. Drain.
