Guest guest Posted September 9, 2009 Report Share Posted September 9, 2009 In my book, the USDA, and they FDA it is a starch along with other starchy veggies because of how the body processes them into carbs. They are nutrious, but they are full of carbs. I also try to serve true veggies aside starchy veggies to balance the carbs with the protein so the meal is balanced. I've been known to eat potato chips along with my mashed potatoes, or potato pancakes with hashbrowns.
