Guest guest Posted September 10, 2009 Report Share Posted September 10, 2009 Low Fat Vegetable Tortilla Grabs 1 7 ounce container hummus 4 8 inch flour tortillas 2 1/2 cups assorted fresh vegetables ( such as zucchini, yellow summer squash, sweet peppers, cucumbers, or carrots cut into thin strips ), and/or sliced mushrooms Spread Hummus on tortillas to within 1 inch of edge. Divide vegetables and/or mushrooms among tortillas, placing vegetables or mushrooms pieces in a row at one edge of tortillas. Roll up tortillas tightly around vegetables . Using a sharp knife, cut rolls in half diagonally. Wrap rolls in plastic wrap and chill for 30 to 60 minutes before serving. * NOTE * If the tortillas do not roll up easily, place them between layers of microwave safe white paper towels. Microwave on 100 % power for 30 to 45 seconds or until tortillas are softened.
