Guest guest Posted September 10, 2009 Report Share Posted September 10, 2009 Sri Lanka Potato Cakes 1 cup of coconut milk 2 medium-sized potatoes 1 teaspoon of salt 2 tbsps. buttermilk 1 cup of flour 1/4 cup of sugar 1 tablespoon of butter cold water a pinch of salt Wash, peel and cube the potatoes until you have about 1-1/2 cups. Boil in salted water for 10 minutes. Drain and mash the potatoes until they're smooth. Beat the buttermilk and the flour into the potatoes, then the coconut milk, salt and sugar, and mix.
