Guest guest Posted September 12, 2009 Report Share Posted September 12, 2009 Whole Wheat Buttermilk Pancakes (light and fluffy) with garnish 3/4 cup all-purpose flour 3/4 cup whole wheat flour 3 tbsps. sugar 1 1/2 tsp. baking powder 1/2 tsp. baking soda 1/2 tsp. salt 1 1/2 cups low-fat buttermilk 1 tbsp. vegetable oil 1 large egg 1 large egg white cooking spray Garnish with fruit, jam, syrup or fruit and whipped cream) Spoon flours into dry measuring cups; level with knife Combine flours, sugar, baking powder, baking soda and salt in large bowl; stir with whisk. In separate bowl, combine buttermilk, oil, egg and egg white; stir with whisk. Add buttermilk mixture to flour mixture; stir until just moist. Heat nonstick griddle or nonstick skillet coated with cooking spray over medium heat. Spoon about 1/4 cup batter per pancake onto griddle.
