I've recently gotten back into pescetarianism (though I eat fish very rarely) after about two years of eating meat (mostly due to financial issues - when you're hungry and someone gives you food, you eat it). Before that I was vegetarian for six years. I find that not eating meat forces me to be more creative and less lazy about cooking. I've never been a big fan of meat or poultry (especially poultry) anyway, so it isn't difficult. One of the things that really made me swear off meat again was when I was on the bus and two trucks drove by, full of cramped, nearly featherless live chickens. I know a lot of vegetarians try to find meat-substitutes to replace the foods they miss, but I'm a vegetarian because I love vegetables. Hopefully I can post some recipes sometime. I tend to use them more as general inspiration rather than following them exactly (except when baking) so I can't really vouch for the quality of the final product of the recipes I save. I might try to figure out some measurements/amounts on a few of the things I've come up with. I'm a big fan of one-pot meals, soups and stir fries and such.
