I never tried to make it since the few times I tried it the flavor just didn't set with me. Wonder if I could make it with cilantro. There's an idea. I don't think the Palestinian family I worked for put mint in their tabbouleh. The only thing they made that I never developed a taste for -- baba ganoush (sp?). I don't know if it's the texture or what. They made the best hummus, though... Audrey S. Guest guest Posted September 15, 2009 Report Share Posted September 15, 2009 Donna, I think I've eaten it without mint and have also made it without mint (because I didn't have mint; I had only fresh parsley for the " leafy " part of the salad. I think it must be like hummus--a basic recipe that most people recognize as " it " and then many variations that can be made that are also " real " tabbouleh. I wonder if cilantro would be pretty strong-flavored, but fresh parsley is nice alone. Now, personally, I would also try it with both parsley and fresh chopped celery leaves. Another flavor that might be good with it--though I've never tried this,either, might be fresh dill weed chopped into the mix. I've eaten Tabouleh that did or didn't have some of the added vegetables: I have seen it with and without chopped cucumber and/or choped, seeded tomato pieces in it.
