Leave the mint out and replace it with fresh chopped parsley, chopped cilantro, chopped spinach…..yadda, yadda, yadda! As I have suggested to others, try different toasted nuts and dried fruits too. Don't forget to substitute different oils also, but you might want to remember that stronger oils such as sesame require less be used or their essence will overpower all else. I personally enjoy the mix of mint and dried cranberry along with the light oil flavors. Generally I stay away from oils, so they are only added and consumed perhaps once or twice per year at special feasts. I never consume solid or hydrogenated oils under any circumstances. I get enough natural oils from plants such as avocados, nuts, and olives. The real joy of cooking and preparing foods for meals is in the mixing and experimenting with ingredients to attain delightful flavors that warm the soul and make memorable mealtime experiences. There is no real right or wrong with foods if you use ingredients that taste right to you. What's right for one may be detestable for another. If you can't handle mint don't use it and experiment with whatever sounds good to you. You know, we vegetarians have many more food varieties, tastes, textures and colors available on our tables than the average carnivore can begin to imagine, and we can eat all we want and never gain an unwanted pound of body fat or suffer from an overabundance of artery clogging, heart stopping lipids, or gall and kidney stones!
