If you wash the fresh okra.....then, and this is very important....DO NOT CUT INTO THE POD OR CUT THE CAP OFF.......then steam or cook in just a small amount of water, you will have no slime at all. It is the cutting into the pod or taking the cap off that releases that part of the okra that is so valued in a good Cajun gumbo. I love to take the fresh pods and steam them.....then dip them in melted butter......they are not slimey at all. Of course, our most favorite way to eat okra is to cut it into slices about 1/2 " thick, pour a beaten egg over the slices, then coat them with a mixture of flour and yellow cornmeal.....then fry until crispy and brown. Guest guest Posted September 19, 2009 Report Share Posted September 19, 2009 ok so i did just see 2 recipes in the files for sauteed whole okra, will have to try these soon! and meybe just ry roasting them, seems I prefer all my veggies sauteed or roasted as opposed to steamed.
