Guest guest Posted September 18, 2009 Report Share Posted September 18, 2009 Have you tried peeling, slicing the eggplant lenghtwise @ 1/4 " thick and grilling it on a hot grill? It completely changes and takes on what I have found as a very pleasing sweet flavor. I don't use any oil, but if you don't mind oild then try brushing each side of each slice lightly before grilling. Don't walk away though or you may return to burned eggplant.
