Lay the okra in a single layer on any size cookie sheet that fits into your oven, drizzle with olive oil, (or toss them with the oil in a bowl before laying then on pan) sprinkle with a little salt (the salt is necessary to make them sweet and tender) and put into a 375 oven until they are soft to the touch. Check them after 30 minutes in oven. Depends on size as to how long they take. Pick up by the stems to eat. Note: You can roast any type of veggie this way. Greene beans are terrific this way! If the veggie is too big cut in slices, such as squash, peppers, any veggie will work. Experiment, have fun. Mix and match on the same pan.
