Baked Banana Bites

 

1 cup unsweetened coconut milk

2 to 3 tablespoons dark rum

1 cup fine soft bread crumbs

1 cup sweetened shredded coconut, lightly chopped

3 tablespoons sugar

1/2 teaspoon ground cinnamon

4 firm bananas, cut into 1-inch chunks (24 pieces)

1/4 cup melted butter

 

Preheat oven to 400 degrees. Butter jelly roll pan: 10x15-inches.

Mix coconut milk and rum together. In spearate bowl, mix together bread crumbs,

coconut, sugar and cinnamon.

Dip banana pieces into coconut mixture and then into bread crumb mixture. Place

on prepared pan. Drizzle butter over bananas and bake 8 to 10 minutes or until

brown and crisp. Serve hot or at room temperature. Yields 4 to 5 servings.
