New here need salad varieties

Hello, I just joined this group as a request from my mom who has recently been

diagnosed with terminal lung cancer which is a shock as she has never smoked in

her life or had any reason to ever imagine getting this. She has kept a good

diet including veggie homeade juices. Her diet is more rigorous now, she should

only have veggies, all kinds especially red veggies. We need salad ideas that

will include all colors of veggies, beans, nuts, all kinds, that will be

appetizing to eat and filling. She needs to eat one everyday. Garbanzos are good

for her but we need ideas that don't just include lettuce or spinach. She can

probably only use olive oil for dressing, or lemon. Stuff like this, I am

Look in the bean folder, garbanzo beans make up delicipus hummus. We have

several recipes for hummus in there.
