Guest guest Posted September 24, 2009 Report Share Posted September 24, 2009 Oat-Chip Banana Bread 1/2 cup shortening 1 cup sugar 4 egg whites or egg substitute equivilant to 2 eggs 1 1/2 cups mashed bananas (2 to 3 to medium) 2 cups flour 1 cup quick cooking oats 1 teaspoon baking soda 1 teaspoon baking powder 1 teaspoon salt 1/2 cup miniature semisweet chocolate chips In a mixing bowl, cream shortening and sugar. Add eggs whites or egg substitute, beat well. Add bananas; mix well. Combine flour, oats, baking soda, baking powder and salt; add to the creamed mixture, stirring just until moistened. Stir in chocolate chips. Pour into a 9 x 5 x 3 inch loaf pan sprayed with non stick cooking spray. Bake at 350 degrees for 65 to 75 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes; remove from pan to a wire rack. Yields 1 loaf.
