Guest guest Posted September 24, 2009 Report Share Posted September 24, 2009 Hoe cakes are just basically finely ground cornmeal and boiling water mixed together, let sit for about 10 minutes and then drop spoonful into a hot frying pan that has a oil covering the bottom. Brown on one side and flip and brown on the other side. and cooking in a hot skillet with oil. It came from the days of slavery and folks would make them on the flat part of a gardening hoe and cook them over a fire. When I make them, I take Cornmeal mix and stir in enough water to make to a cake batter consistency. Then stir in some diced onions and drop spoonfuls into a hot skillet that has just the bottom covered in oil. Flip and brown on both sides. After it is cooked, I personally like to spread it with a very thin layer of Sovex, which I'm told is like that spread from Australia. It is a strong salty flavor, so a little goes a long way. Then serve it with some butter beans, with diced tomatoes and onions on top and some fresh cooked greens and fried red potatoes with onions or fresh cooked creamed corn and you've got a fantastic southern meal.
