Guest guest Posted September 28, 2009 Report Share Posted September 28, 2009 Caramel, Pineapple Bar Cookies non-stick spray 2 cups all-purpose flour 1 1/2 cups quick or old-fashioned oats 1 teaspoon baking soda 1 stick butter, softened 1 cup packed brown sugar 2 eggs 2 tablespoons milk 1 teaspoon vanilla extract 1 20 ounce can pineapple tidbits or crushed pineapple, well drained 1/2 cup caramel topping Heat oven to 350 degrees. Spray a 13x9x2-inch baking dish with non-stick spray. Set aside. Stir the flour, oats and baking soda until combined; set aside. In a medium mixing bowl, beat the butter and sugar until light and fluffy. Stir in the eggs, milk and vanilla until well combined. Stir in the flour mixture until thoroughly mixed. Stir in the pineapple until just mixed. Pour into the baking pan. Bake for 20 to 25 minutes or until a toothpick inserted in center comes out clean. Cool for 15 minutes. Drizzle caramel over top.
