I grew up with my grannie's tacos and when I became interested in vegetarianism the only thing I really missed were her tacos sooo Ifound a way to make them. Grannie's Tacos refried beans lettuce tomatoes and green onions Mayo GOOD corn tortillas. cheese (optional) your favorite salsa or taco sauce how much you need depends on how many you make. chop lettuce (do not dry ), tomatoes and green onions. Mix in bowl with a couple of tablespoons of Mayo. The reason you leave the lettuce wet is that it will thin the mayo and help the salad blend together. Set aside. Put about an inch of canola oil in a frying pan and slowly heat. If you wish to add cheese melt into the beans now. Place about 1 to 2 tablespoons of beans into a tortilla you have warmed either in a pan or (if you have a gas stove) directly on the burner. Use a toothpick to hold close. Fry tacos on both sides and drain on paper towels. When you've made desired amount of tacos, stuff each one with the salad. You can either let each person add salsa themselves or add before the salad. Enjoy. My Aunt could eat a full dozen of these, I'm lucky to finish 3.
