Vegan Cupcakes

I bought my tiny Cuisenart food processor, then, didn't stop there. I bought the

little cookbook " Vegan Cupcakes Take over the World. " The rest of my family eat

animal products, and such, so regular milk is what I buy. Can I replace soy

milk, with rgular milk,and if it's vanilla soy milk, can I use regular milk,

with a bit of vanila? Or do I need to buy soy milk to make the recipe work?

 

Can I use regular yogurt, which we have, inplace of soy yogurt? I'm not

necessarily trying to be vegan, but her cookbooks are great reading. She wrote

VEgan with a Vengance, as well.

I have this cookbook. I don't know how experienced you are in baking. If you

are using a vegan recipe then make the recipe with vegan ingredients. Your dairy

products will probably work but I see no point is using them in a vegan recipe.

Baking is a whole different world, it isn't the same as cooking at all.

If you want to use up the dairy prpoducts then get a dessert recipe from your

regular cookooks, play it safe, enjoy your baking.

There are so many " regular " cupcake recipes out there that are already

designed for ovo-lacto. You might want to try those if you want to use

animal products.

 

But, FWIW, I've made some of those vegan cupcakes and taken them to work

without announcing they were vegan. They were the most popular and

everyone wanted the recipe. Vegan or not, Moskowitz's vegan cupcakes are

amazing!

I made a batch,and I love them. If I had not told my 18 year old that they had

soy milk in them (which isn't as exotic as I thought,by the way, lol...(quart

size, in the healthy department), he wouldn't had known.I took 2 over to my

neighbor, told his wife that they were vegan. They are good,and the buttercream

frosting, wow, it's good. My mom said that things made of soy taste slimey,but

I think that's in her head. I'm the pickiest of eaters,and they are good.

That is great to hear Rhonda. Vegan can be very good. I have a recipe for

Banana Bread that is vegan. I love it. I sent it to the group last month.

 

BTW most grocery stores carry soy milk next to cow milk. I love soy milk. I

often dilute it down with a little water, as I like it thinner than come in the

cartons and a good bonus of that is that the milk lasts a lot longer. LOL
