I made, from the 30 minute Vegan book, the Zuchini roll ups, on page 295. I

used egg-plant, and didn't have tahini, so I skipped it. I used vegan soyerella

grated cheese. Other than needing slat, OMG, it is good!!! The tofu tastes

exactly like richotta cheese. Seriously, the calorie content, well...under 50 a

peice, if that. They taste amazing!

 

Took me about 5 minutes to stir it up,and about 5 minutes to cut the egg

plant,and about 5 minutes to roll it up, and I cooked it for 15 minutes, not 10.
