Spinach Calzones

Here is a recipe to make spinach calzones. It's become a favorite in our house,

and you can substitute any sauteed veggies that you like. I also use the dough

recipe for pizza crust, just divide dough in half and roll out into two thin

crusts and bake at the same temp until mostly cooked before topping and baking.

 

1 1/2 Cup of All Purpose Flour

1 1/2 Cup of Whole Wheat Flour

2 Teaspoons of Baking Powder

1 Teaspoons of Salt

1 1/2 cups water

 

Marinara sauce

Shredded cheese of choice

2 cups frozen spinach, heated through with water pressed out

 

Preheat over to 400. Combine dry goods for dough, add water and blend together

with hands. Knead, adding extra flour as needed to prevent sticking.

 

Section into 5 or 6 dough balls and gently roll or stretch with hands on floured

surface into circles. Brush each piece lightly with olive oil, then add cheese,

spinach, and 2 tbsp. of marinara. Fold over half of dough to cover, and press

ends together to close. Brush outside of dough with olive oil, and bake on

parchment paper for approx. 20 minutes @ 400, until calzones are golden brown.
