Summer Squash Tart 2 T olive oil 1 zucchini 1 yellow squash 1 med. onion sliced 1 red bell pepper sliced (or green or yellow pepper, but red is sweetest) 1/4 tsp dried oregano or thyme 1 clove garlic chopped black pepper 1 refrigerated pie crust(from a box of 2) No Lard Crust 1/2 C feta cheese plus a little more to put on top 1 plumb tomato sliced and seeds removed Heat the oil in a large skillet. Saute the onion, bell pepper, garlic, zucchini and squash until onions are golden but not brown, about 10 minutes. Remove from the heat and add oregano or thyme and pepper to taste. Cool to room temp. Heat the oven to 400 F. Line a baking sheet with parchment paper. Unroll the pie crust onto the paper. Sprinkle the feta cheese in the center of the pie crust within 2 inches of the edge. Pile the veggie mixture on top of the feta. Fold and pleat the edges of the crust over the edges of the filling, leaving the center uncovered. Bake for 35 to 40 minutes until crust is golden brown.
