Congratulations for appreciating Tofu. It is actually made like the method of

making cheese but from Soy milk.It has the entire nutritional qualities of the

entire Soya including protein(HDP) and the Soya oil. The taste is bland like

Soya. We can add anything to it like you have already done.

Finally, I've come to enjoy tofu. First I bought some for the

miso soup

because my granddaughter loves it. I had half a block left over, all

pressed and ready to go. A marinade of teriyaki sauce, a quick fry in

hot oil, served over a bed of leftover rice and broccoli laced with soy

sauce, made a delicious meal. Hey, this stuff can be good! I guess I'll

try some other ways now that I'm over the hump.

I love making fried rice with tofu.  I put some sesame oil in my wok with tons

of chopped ginger, add the cubed tofu and cook a bit, then add about 2 cups of

wild rice medley followed by chopped baby bok choy, peas and carrots and

anything else I have and finish it off with some Bragg's amino acids, aka soy

sauce.  Food of the Gods and easy as pie to make

I'm learning to use tofu as well.

Scared of tofu? Why? It's not the boogeyman. Grab some and try a recipe from

our files. Come on open up a whole new culinary world.

Yes, you can freeze tofu. It actually changes the texture somewhat. A google

search will probably give you lot of information. There is a whole section on

freezing tofu in Vegan with a Vengence (and other cook boos too I'm sure).

It's worth a try!

If you have a chance to try dishes in a restaurant with tofu, go for it! The

first time I tried tempeh was as take out - I had never heard of it but went

back to ask what it was was once I had tasted it!

That's a good point. I would never have persisted using it at home if I

hadn't had the experience of enjoying it at a restaurant first. It was

clear that my preparation methods and not the tofu itself were at fault.

LIke anything, learning to prepare tofu takes technique, acquired by

trial and error sometimes.
