Guest guest Posted October 11, 2009 Report Share Posted October 11, 2009 It is a very simple recipe, I don't measure so I tried to guesstimate the quantities for you. 1 can Bush's vegetarian Baked Beans 1 can of black beans drained 1 medium onion sliced 1 large bell pepper sliced 1 cup Sweet Baby Rays Bar-b-que sauce (can use more or less according to taste) salt & pepper 4 acorn squash halved and seeded sautee (or grill) the onions and peppers until soft, salt and pepper to taste add the can of baked beans with liquid and the drained black beans to onions and peppers and cook till warm (about 3 minutes) add the bar-b-que sauce to beans and stir place the cut and seeded acorn squash in a baking dish (skin side down) and spoon in the beans and pepper mixture to fill the indention and to cover the top of the squash. Bake, uncovered in a 350 degree oven for 45 minutes to an hour. (Squash should be soft to the skin) We like this as a main dish. My son loves this with cheese on top. These freeze well and reheat quickly. Like most things it is even better the next day, so if you have a few extra, take it for lunch. I don't think I've ever seen that brand of BBQ sauce, but I love sweet BBQ and I've got a brand that I like. Thanks, I'll let you know when I make it!
