I'm looking forward to finding out how to cook veggie with more variety and trying to wean away from some of the substitutes that can be high in fat and especially salt. I thought I'd pass along a quick favorite for here that is good if you are just starting out and don't really know how to use different foods to make a good tasting meal. I know you can get the Morning Star Farm Crumbles, but one time they were out I came across a good substitute. I've noticed in the meat counter that they have pre-chopped taco meat, but had never tried any before going veggie. When they didn't have the Crumbles one day I bought some Boca patties instead, microwaved all 4 for about 20 seconds (more and they become mush) and then you can cut them into little squares that look kinda of like that taco meat at the meat counter. (You can use Morning Star Farm Grillers, but they taste is different and not as soft as the Boca patties.) We just use McCormicks mild taco seasoning and some onions, fry it like taco meat and serve like you would have before and it works great and is quick when you are short on time. Becareful also with your oil as Boca is like eggplant or mushrooms it soaks up the oil and then releases when it's done making a greasy dish, so just use a little less oil and cook it slower than you would hamburger meat, so you don't have all that grease afterwards.
