Just a reminder to save those wonderful nutritious seeds when you carve that

Halloween pumpkin. They contain many minerals and are high in protein. Some

reports state that Pumpkin Seeds help to lower cholesterol.

 

Wash the seeds with cold water and remove the pulp .

Spread the seeds on a lightly oiled cookie sheet and season with your favorite

herbs and spices. Bake at 300-350 degrees until light brown. Be careful not to

burn.

 

I just made a batch this morning and added chipped coconut and sunflower seeds.

I seasoned with sea salt,smoked paprika and garlic powder.

I browned the pumpkin,sunflower,coconut mixture on the stove top burner(med

heat) in an iron skillet,stiring constantly. Careful not to let them burn. I

prefer this iron skillet method because it is fast and easier to watch for just

the right amount of browning.
