They contain many minerals and are high in protein. Some reports state that Pumpkin Seeds help to lower cholesterol. Wash the seeds with cold water and remove the pulp . Spread the seeds on a lightly oiled cookie sheet and season with your favorite herbs and spices. Bake at 300-350 degrees until light brown. Be careful not to burn. I just made a batch this morning and added chipped coconut and sunflower seeds. I seasoned with sea salt,smoked paprika and garlic powder. I browned the pumpkin,sunflower,coconut mixture on the stove top burner(med heat) in an iron skillet,stiring constantly. Careful not to let them burn.
