You can easily double this recipe, too. Zucchini Pancakes 1 1/2 cups shredded zucchini 1 egg, lightly beaten 2 Tbs biscuit/baking mix 3 Tbs grated Parmesan cheese Dash of pepper 1Tbs cooking oil In a bowl, combine zucchini, egg, biscuit mix, cheese and pepper. Heat oil in a skillet over medium heat; drop batter by 1/4 cupfuls and flatten. Fry until golden brown; turn and cook on other side.
