Guest guest Posted October 11, 2009 Report Share Posted October 11, 2009 I finally got around to making lentil soup Thursday night -- a coworker told me how to make it, very simple. I used a bag of lentils, several cups of veg broth (I don't measure well unless I'm baking!), a couple of cloves of garlic, a minced onion, and a handful of chopped carrots. I ate some that night and it was ok but I was kind of disappointed. Not like the stuff I had had in restaurants. I ate out Friday and so didn't have my leftovers. On Saturday, I discovered that lentil soup is much better as leftovers than new-made. It was wonderful! I always have to remind myself that dishes with onions and/or garlic often end up tasting much better the next day, the flavors go through the food. I love lentil soup because it's easy and cheap and full of protein. I froze three servings today because I was worried about it going bad. I'll bet it re-heats from frozen really well, too!
