See below for what I did Jeanne tnhillwoman North East TN zone 6 " Lentil Loaf " 1 c lentils 3 c veg broth 2 c oats (quick or old fashioned both work) Used 1 cup old fashioned oats, 1 cup steel cut oats 1 c ketchup used about a cup of tomato salsa 2 heaping tbsp mayonnaise (vegan version) 1 tbsp worchestershire sauce (vegan version) none on hand left it out 2 tbsp soy sauce 1 tbsp minced garlic love garlic so used 5 cloves chopped 1/2 cup sliced almonds Used about 1 cup of walnuts chopped and added fresh parlsey from the garden chopped I want to try and make burgers out of this too as it is quite firm Bring the broth to a boil and add lentils. Simmer 20 minutes. Turn off heat and stir in oats, 3/4 cup ketchup, mayonaise, worchestershire sauce, soy sauce, garlic, almonds, and 1/2 cup water might need a touch more water. Stir well and place in a greased loaf pan 9X5 . Top with remaining ketchup and bake at 350 degrees for 30 minutes. Serve with mashed potatoes, mushroom gravy, and a green vegetable.
