Oil 1 onion 3 1/4 cloves minced garlic 5c. Cooked kidney beans 1 2/3 c. Water 2 Tbsp + 1 1/2 tsp chili powder 1 3/4 tsp ground cumin 1 Tbsp + 1/4 tsp prepared mustard 1/8 tsp cayenne 2 Tbsp + 1 1/2 tsp soy sauce 3 1/3 c. Mashed sweet potatoes 10 flour tortillas 7 oz. Shredded cheddar Directions Heat oven to 350?F, heat oil in skillet, saute onion and garlic until soft, add beans, mash and stir. Add water and heat until warm. Remove from heat and stir in chili powder, cumin, mustard, cayenne, and soy sauce. Divide bean mix and sweet potatoes between tortillas. Top with cheese, fold, and bake for 12 min. I love sweet potatoes and they are so good for us, but I don't like sweet main dishes. I am afraid that with the sweet potatoes it would just be too sweet for my taste. I thought maybe the soy sauce and other stuff would cover the taste, but I am stilll hesitant to try it. can some of you who have tried this tell me how strong the sweet flavor comes through. I don't think it will taste like a " sweet " dish because there are so many other non-sweet ingredients. One change I am thinking of making is instead of mashing the sweet potatoes is to cook the whole sweet potatoes part way in the microwave, then peel and dice them, sauté in a little oil and set aside. Then sauté the onion and garlic and add to the mashed beans. Mix mashed beans with the rest of the ingredients, except for the cheese.....spread the bean mixture on the tortillas, add some of the sautéed diced sweet potato to each, then sprinkle with cheese, fold over and follow rest of the recipe as written. All depending how you season sweet potatoes, they can lend themselves to a number of different kinds of tastes....sweet or not so sweet. Nancy C. Guest guest Posted October 14, 2009 Report Share Posted October 14, 2009 I make a similar recipie with black beans, ginger and green chilies--no mashed potatoes, cheese or soy sauce, --it is delicious!! It is put together similarly. You saute the onions garlic and ginger then add the cooked sweet potatoes and black beans and then I mash it lightly so it isn't completely mashed, but still has some chunks of the black beans in it. I garnish with limes and cilantro--it is the bees knees and not too sweet!
